Scallop Carpacchio

This is a fantastic appetizer. We did similar back east, there is a photo preceding. The scallops are fresh, still alive in their shells when we receive them from back east. Once out of their shells they are some where in between a u-10 and a u-12. These scallops are so fresh that once removed from their shells you can actually see the mussel twitching on your board. We have the shells cleaned and serve the scallop in its actual shell. Pretty cool. And a must for scallop adores, dont let the fact that the scallop is raw discourage you. They taste amazing, and receiving a shellfish so fresh would be a shame to sear and or cook them even though, it would be one of the best seared scallop dish's you would ever try.
