a few new dishs...

So as we spend this week working on builds, organizing, and minor construction still we will be doing some food work. I will try to document recipes by the day but as this was my first day making this my first week, falling behind is possible, but will do my best. Couple things today we actually built, a scallop carpacchio and a cauliflower "cous cous" appetizer. The scallop is as well. Beyond these two dishs i worked on the begginings of stock/sauce work, going through daily inventory sheets, prep sheets and pars per station and a considerable amount of time finding and securing places for items. Luckily we have a "receiver" to accept and process all deliveries, but still these next two weeks will be monsters. We all arrived this a.m. at 5 and are at minimum on 12 hour shifts (the chefs). Next week our cooks will begin work, giving us this week for our inspection (Thursday), and finalizing all dishs "builds" upon their starts... so just a few photos. Our scallop appetizer and cauliflower cous cous dish. Missing the espellet yogurt on the salad but other than that, these are pretty close.
