apple cider glaze for chicken, turkey . and quail
Cider glaze for turkey:
4 cups apple cider,
2TB cider vinegar,
4TB butter, room temp.
Salt and black pepper.
To make glaze:
Boil cider till reduced to 3/4 cup. Add the vinegar, 2TB butter, salt (1tsp), 1/2tsp pepper. Stir until melted.
Use to glaze turkey every 10 minutes. Be sure to save pan juices for either a jus, or our case, for thanksgiving, the bourbon gravy.
