espellete yogurt
Not shown but goes on as a few small dots is the seasoned fage yogurt. Since the dish of all fresh vegetables that have been tossed with a lemon vinaigrette is so crisp/fresh it turned out we will use a little bit of our yogurt from our beets dish to add just a touch of creaminess and touch of spice.
Fage yogurt
Espellete pepper
A modified cornstarch to give it just a bit more thickness
Sugar
Salt
Combine everything above in vita prep and mix. Adjust seasoning and place in squeeze bottle. Chill. I feel like i am forgetting something but will remind myself when we build our beets dish, I think tomorrow. Either way, you get the idea and purpose.
