Zucchini fritters (SIP) recipe
1 zucchini (2medium) grated on box grater.
1 tsp salt.
1 TB lemon zest.
10 sprig parsley fine chop/mince.
1 clove garlic, minced.
1\4 tsp fresh black pepper.
2 large eggs.
1\2 cup flour, A.P.
Feta cheese to taste.
Olive oil to fry in.
Place all ingredients in a mixing bowl and season with spices and Feta. Heat olive oil in in a sautee pan and add Table spooned amounts in the heated olive oil. Let brown on one side and turn over and cook several more minutes. All in, cooking time is 3 minutes max. Remove from sautee pan and place on rack or towels to drain. Season with a little bit of salt and check for flavor. You can also zest some fresh lemon on top or place a little more Feta cheese on top.
